Makes 16 pancakes

Ingredients
• 225g plain flour
• 1 tbsp sugar
• 1 tbsp baking powder
• 1 pinch salt
• 3 tbsp butter
• 310g cup milk
• 2 tsp vanilla essence
• 1 egg
• half a punnet of strawberries

Method
For the Batter
• Whisk together the dry ingredients (flour, baking powder, sugar, and salt)
• Melt the butter.
• Whisk together the wet ingredients (melted butter, egg, vanilla, milk)
• Add the wet ingredients to the dry ingredients, whisk them until well combined.
• Leave the batter to rest for 10 mins.
• While the batter is resting, dice the strawberries into 1cm cubes.
• Fold the diced strawberries into the pancake batter.

Cook the pancakes
• Heat a pan to medium heat.
• Add a little butter or oil to the surface of the pan.
• Scoop a quarter cup of the batter and pour it onto the heated pan. Your pancake won’t be perfectly round, the lumps of strawberry means you will get imperfect circles.
• Watch for small bubbles to appear on the surface of the pancake and burst, when you see them, it’s time to flip the pancake.
• Keep an eye on them now, the second side of the pancake won’t take long to cook.
